Gulai Ayam - Spicy Madurese Chicken

For those of you who enjoy a bit of spice in your life, this is one of the more popular main meals on our menu at KLUB KOKOS.

Ingredients:

1 kg chicken pieces
1 litre coconut milk
5 fresh paprikas
5 small red onions (or 1 large onion if red onions not available)
3 cloves garlic
3 teaspoons coriander
1 teaspoon cumin
5 candle nuts
2 cm fresh turmeric
2 cm fresh ginger
2 teaspoons salt
1 stick lemon grass, pounded
1 tablespoon tomato paste
5 fresh lime leaves
2 teaspoons palm sugar
3 tablespoons oil for frying

Method:

1. Blend all of the spices above (except lemon grass & lime leaves) in a blender.
2. Stir-fry the spice mixture in oil for 3 minutes, until it gives off a fine aroma.
3. Add chicken pieces, turning frequently until thoroughly covered with spices & starts to brown.
4. Pour in the coconut milk that has been mixed with tomato paste, adding the lemon grass, lime leaves & palm sugar.
5. Simmer until the chicken is tender & the sauce has thickened - approximately 1-1/2 to 2 hours - stirring occasionally.

Serves 6 to 8 – served with rice & salad.
