(Noodle Soup with Vegetables)

Noodle Soup with Vegetables

 

 

A simpler recipe this time, but a favourite with many of our guests. This dish may be easily prepared as a light meal.

Ingredients:

Egg noodles
Assorted green-leaf vegetables
e.g. Chinese cabbage, spinach, cabbage, snow peas
Carrot, thinly sliced
Garlic, crushed
Chives or parsley

Method:

1. Boil egg noodles for required time until soft. Drain and set aside.
2. Add a teaspoon of oil to a pan. Heat, then add garlic, stirring for a few minutes.
3. Add salt and pepper to taste.
4. Add chopped vegetables and stir for 30 seconds before adding a cup of water. Bring to the boil.
5. Add noodles and simmer for 2 minutes.
6. Add finely chopped chives. Served with white rice.
