(Rendang - Javanese Spicy Beef)

Another of the favourites on our menu at KLUB KOKOS is one that can be found in most Indonesian restaurants throughout the world. This recipe is included with our newsletter at the request of a dear couple from New York that stayed with us for a few weeks in August and are looking forward to be able to try the recipe out in their own kitchen. Of course the ingredients below may not be available in their fresh form in your area of the world, but generally a hunt at your nearest Asian Supermarket will uncover dried equivalents that may be substituted to give a similar flavour.

Rendang - Javanese Spicy Beef

 

Ingredients:

1 kg topside steak
10 small red chillies
1 lump fresh ginger
1 lump fresh turmeric
1 lump galangal (ginger plant)
10 cloves small red onions
3 cloves garlic
2 lime leaves
2 sticks lemon grass
2 turmeric leaves
2 slices tamarind
1500cc thick coconut milk made from 3 coconuts

Method:

1. Cut up the beef into chunky cubes and set aside.
2. Finely grind the chillies; grate up the ginger, turmeric and galangal; finely mince the red onions and garlic; bruise the sticks of lemon grass; and chop up the turmeric leaves.
3. Add all the spices above to the coconut milk, then bring to the boil. Add the lime leaves and tamarind, and salt to taste. Bring back to the boil.
4. Simmer the coconut milk, continually stirring until the oil starts to divide from the milk.
5. Add the beef, stirring continually until it returns to the boil. Once the beef is half cooked, lower the flame.
6. Continue simmering until the beef is tender and the sauce has turned a darker brown. If the beef is not yet tender enough, a little water may be added to the pot.

Serves 4 – served with white rice & salad.
